Winery Overview

Minimum Wines is an organic and natural wine producer founded by Matt and Lentil Purbrick, with roots in farming, foraging and minimal intervention winemaking. The focus is on organic grapes, wild fermentation and letting each wine evolve with as little control as possible, resulting in wines that are expressive, unfiltered and shaped by vintage and place.

Region and Vintage Conditions

The 2021 vintage offered balanced growing conditions, allowing steady ripening and flavour development while maintaining natural acidity.

A blend led by Sangiovese with small portions of Syrah and Cabernet Sauvignon, selected for structure, freshness and depth of fruit.

Winemaking

Wild fermented on full skins in open vats with regular punch downs. Pressed to seasoned 300L barrels for malolactic fermentation and aged for 27 months. Components are then blended and matured further before bottling, unfiltered.

Tasting Notes

Appearance: Deep ruby red.
Aroma: Red plum, dark berries with subtle savoury notes.
Palate: Balanced and rounded with bright fruit, gentle structure and soft tannins.
Finish: Smooth with lingering red and dark fruit.
