Winery Background

Moppity Vineyards is a family‑run estate led by Jason and Alecia Brown in the Hilltops region of New South Wales. The Lock & Key Cabernet Sauvignon offers approachable cool‑climate character and consistent value, showcasing the quality of the estate’s vineyard sites.

Vineyards and Vintage Conditions

Joel 2021 benefited from a cool to moderate climate in Hilltops, where warm days and cool evenings support gradual ripening. Fruit was sourced from low-yielding blocks managed carefully to deliver balanced structure, vibrant varietal flavours and freshness.

Winemaking Process

Grapes were cold-soaked before a nine‑day fermentation followed by 14 days of extended maceration. The wine matured in a mix of new and seasoned French hogsheads and barriques with multiple rackings to clarify and develop texture. Bottled under screwcap to preserve freshness.

Tasting Notes

Deep purple-red in colour. The nose shows lifted blackcurrant, juicy cassis, dried herbs and cedar. The palate is complex and layered with dark fruit, subtle spice and dark chocolate. It feels smooth and supple with youthful energy and fine structure.

Food Pairing

Pairs well with grilled beef or lamb, roasted poultry, charred vegetables or aged cheeses. Its firm structure and fruit depth make it equally well suited to hearty vegetarian meals.

This Cabernet Sauvignon is the Lock & Key brand’s expression of Hilltops Cabernet. Designed to be varietal and structured but never heavy, it captures cassis, cedar and spice in a balanced and approachable style for everyday enjoyment but with real character.
