Vineyards and Vintage Conditions

The fruit for this 2024 Sparkling Brut was sourced from select cool-climate vineyards in New South Wales. The growing season delivered mild conditions, allowing slow and steady ripening. Ideal for sparkling base wines that require crisp acidity and purity of fruit.

Winemaking Process

Made using the Charmat method to preserve vibrancy and freshness, this Brut underwent primary fermentation in stainless steel, followed by a secondary fermentation under pressure to develop fine bubbles. The wine was kept on lees briefly before bottling to enhance texture and flavour complexity.

Tasting Notes

Pale straw in the glass with fine, persistent bubbles. Aromas of citrus blossom, green apple and white peach lead into a lively palate with lemon zest, crisp stone fruit and a hint of brioche. Fresh and energetic, with a dry finish and delicate mouthfeel.
