Winery Background

Moppity Vineyards is a highly regarded cool‑climate estate in the Hilltops region of southern New South Wales. The estate regularly earns national acclaim for producing elegant and expressive wines. The “Twelve Signs” series links each variety to a zodiac theme. Sagittarius symbolises depth and balance in this Cabernet Sauvignon release. 

Vineyards and Vintage Conditions

This wine is crafted from Cabernet Sauvignon grapes grown in vineyards on free‑draining, red granite loam soils at elevated sites. The 2023 season offered ideal conditions of warm days and cool nights that produced clean varietal fruit with ripe tannins and refreshing acidity. 

Winemaking

Fermented in small batches to preserve varietal brightness, the wine underwent moderate oak ageing. The oak influence is subtle and supportive, allowing the fruit and tannin structure to stand centre stage. 

Tasting Notes

• Appearance: Deep ruby with bright clarity

• Aroma: Juicy blackcurrant and briary fruit combine with cedar spice and herbaceous undertones for added complexity 

• Palate: Mid‑weight and elegant with flavours of cassis and crushed berries framed by gentle oak spice and supple tannins

• Finish: Clean and persistent, the savoury tannin keeps the fruit long‑lasting and balanced

Food Pairing

Pairs exceptionally well with roasted lamb, grilled beef, rich vegetable ragù or aged firm cheeses. The structure will also stand up to casseroles and mushroom dishes.
