Winery Background

Moppity Vineyards is a premium estate located in Hilltops, an elevated cool-climate region in southern New South Wales near Young. Owned by Jason and Alecia Brown, the winery is celebrated for crafting medium-bodied, expressive wines. The ‘Twelve Signs’ series takes inspiration from the zodiac, with Taurus representing strength and balance. 

Vineyards and Vintage Conditions

Fruit for this blend is sourced from vineyards in Hilltops, planted on free-draining red granite loam at approximately 500 to 600 metre elevation. The 2023 vintage delivered balanced fruit under warm days and cool evenings. Perfect for Bordeaux-style varietals. 

Winemaking

Cabernet Sauvignon and Merlot were fermented separately in small batches to preserve varietal character. Both components were blended after oak maturation to achieve harmony between plush fruit and refined structure. 

Tasting Notes

• Appearance: Deep ruby with bright clarity

• Aroma: Forest fruits such as blackberry and plum framed by spicy herb and cedar notes. Subtle earthy complexity adds depth. 

• Palate: Medium to full bodied and balanced. Flavours of dark berry, cassis and soft plum mingle with gentle tannins, firm acidity and modest oak spice.

• Finish: Clean and satisfying, with lingering blackberry and savoury spice.

Food Pairing

Pairs exceptionally well with roasted lamb, beef juvenile cuts or game such as venison. Also works with herb-roasted vegetables, wild mushroom dishes and aged firm cheeses.
