Winemaking
Following traditional Penfolds winemaking practices, the Cabernet Sauvignon and Shiraz parcels are vinified separately before being carefully blended. The wine is matured for approximately 12 months in American oak hogsheads, with a proportion of barrels previously used to mature the preceding vintage of Grange. This approach adds subtle oak complexity while preserving the fruit purity, texture and balance that have become hallmarks of Bin 389.
