Winery Background

Ross Hill Wines is a family‑owned estate in the Orange region of New South Wales, run by the Robson family. The Family Series includes wines named after grandchildren; ‘Tom’ Cabernet Sauvignon captures the region’s cool‑climate character with approachable depth.

Vineyards and Vintage Conditions

The 2022 Cabernet Sauvignon comes from vineyards across Orange, planted at 650–850 m elevation. Cool nights and warm days preserved varietal freshness while allowing rich blackcurrant and cassis flavours to develop richly.

Winemaking Process

Fruit was harvested from three vineyard sites and fermented with 100 % whole berries. Around 10 % of the final blend spent time in new French oak hogsheads, with the rest aged in seasoned oak for approximately 12 months. The wine was bottled under screwcap to preserve its ripe red-fruit focus and aromatic lift.

Tasting Notes

Medium-bodied and ruby-red, this wine shows aromas of blackcurrant, raspberry, vanilla and roasted herbs. The palate is juicy and smooth, combining cassis and red fruit with soft tannins, cedar spice and a lingering savoury finish.

Food Pairing

A great match for roast lamb, grilled steaks, mature cheddar or mushroom-based vegetarian dishes. Its balance of fruit intensity and structure makes it versatile at the table.
