Ross Hill Wines is a family-run estate based in Orange, New South Wales, operated by the Robson family. The Pinnacle Series showcases the finest parcels from their high-altitude vineyards. Their Blanc de Blancs represents the pinnacle of their sparkling range and reflects the region’s cool-climate finesse.

Vineyards and Vintage Conditions

The 2021 Blanc de Blancs is made from estate-grown Chardonnay fruit at elevations between 750 and 1,020 m. The cool growing season and slow ripening helped preserve bright acidity while allowing citrus and brioche-scented complexity to develop naturally.

Winemaking Process

This wine is produced in traditional méthode traditionnelle style. Estate-grown Chardonnay was naturally fermented with wild yeasts, and the wine spent three and a half years on tirage. Final bottling was undertaken to retain fine bead and lasting freshness.

Tasting Notes

Pale straw with a fine and lively bead. The bouquet combines citrus peel, finger-lime and shortbread notes, leading into a palate of crisp grapefruit, light brioche and a long line of acidity. The finish is elegant, dry and refined.

Food Pairing

Ideal as an aperitif or with seafood dishes like oysters and smoked trout blinis. It also matches light hors d’oeuvres and salads, and complements creamy or salty cheeses with aplomb.
