Winery Overview

Seville Estate’s Estate Range is produced entirely from fruit grown on the property, crafted in the on-site winery to reflect the purity of their Upper Yarra vineyard. Surrounded by native flora and rooted in rich red volcanic soils, these cool-climate wines express a clear sense of place and the character of each vintage.

Region & Vintage Conditions

The 2021 season is regarded as one of the Upper Yarra’s finest, mild, steady temperatures and even rainfall supported balanced growth and layered flavour development. Harvest began in early March, allowing fruit to ripen without the heat pressure often seen in February.

Handpicked fruit primarily from an east-facing Chardonnay block planted in 1996, selected for its elegance, clarity, and cool-climate precision.

Winemaking

Whole bunches gently pressed, juice settled overnight, then gravity-filled into French oak ranging from 300L to 2,200L (approx. 30% new). Wild barrel fermentation followed by 10 months’ maturation on lees. Malolactic conversion is not encouraged. Racked and filtered before bottling to maintain purity.

Tasting Notes

Appearance: Pale and bright with fine clarity.

Aroma: Soft stone fruits, nashi pear, custard apple, crème anglaise, and a subtle freshness reminiscent of a Lillet Blanc spritz.

Palate: Driven by vibrant acidity with notes of green melon and Williams pear, complemented by a line of salinity evoking oyster shells and cool coastal breezes.

Finish: Long, focused, and elegantly restrained, with purity and finesse at its core.
