Seville Estate’s Estate Range is made entirely from estate-grown fruit, crafted on site to reflect the character of the Upper Yarra Valley. These wines highlight cool-climate elegance, deep mineral-rich volcanic soils, and the estate’s distinctive environment, capturing a true sense of place with every vintage.

Region & Vintage Conditions

2020 delivered a mild, evenly paced growing season marked by average rainfall and a well-timed wet winter. Warm, dry conditions at year’s end supported strong canopy growth, while a cooler start to the year pushed harvest two weeks later than usual. Low yields enhanced concentration and flavour intensity, making 2020 a standout vintage despite limited quantities.

Handpicked fruit from estate blocks, harvested at first light and bunch-selected in the vineyard to ensure only the most expressive fruit was used.

Winemaking

80% destemmed and 20% whole bunches, followed by a four-day cold soak. Wild fermentation with daily plunging, then matured in seasoned 300L and 500L French oak with no new barrels. Bottled unfined and unfiltered to preserve purity and cool-climate structure.

Tasting Notes

Appearance: Deep red with a dark, vibrant core.

Aroma: Rich dark berries layered with crimson cherry, evening spice, black pepper, dried thyme, and billy tea.

Palate: Generous and expressive, showing dark cherry, dark plum, and dark passata with lively tomatillo acidity holding everything in balance.

Finish: Firm, spicy, and structured, with cool-climate freshness that will evolve beautifully over time.
