Reserve wines at Seville Estate are sourced from individual estate blocks and represent the finest fruit from standout vintages. Hand-harvested and bunch-selected in the vineyard, often from the original 1972 plantings, these wines deliver complex, site-driven expressions of variety, time, and place.

Region & Vintage Conditions

2019 mirrored the warm, generous conditions of 2016, marked by strong winter and spring rainfall followed by a dry summer. Well-established canopies protected the fruit through a long ripening period, allowing Cabernet Sauvignon to develop balance, concentration, and layered complexity in Seville Estate’s elevated Upper Yarra site.

Handpicked fruit from the original 1972 Cabernet Sauvignon plantings, with each bunch selected in the vineyard to qualify for Reserve status.

Winemaking

Destemmed to allow 100% whole berries, wild fermentation with daily hand plunging, and wild malolactic fermentation. Pressed directly to 300L and 500L French oak barrels (approx. 20% new), matured on lees for 12 months, then bottled unfined and unfiltered to preserve purity and structure.

Tasting Notes

Appearance: Deep, elegant red with youthful vibrancy.
Aroma: Classic cassis and blackcurrant integrated with savoury notes of balsamic pickled onion, Jamon Iberico, and flint.
Palate: Restrained, delicate, and finely balanced, showing soft liquorice, blackcurrant pastilles, crushed native gum, and hints of pipe tobacco.
Finish: Long, savoury, and quietly powerful, with complexity that will continue to build with time.
