Reserve range at Seville Estate represents the finest fruit from individual estate blocks, often sourced from the original 1972 plantings. Each bunch is hand-selected in the vineyard, ensuring only the most expressive parcels are chosen to produce wines that capture varietal precision, site character, and long-term cellaring potential.

Region & Vintage Conditions

The 2021 season in the Upper Yarra is remembered as one of the region’s great vintages, defined by mild temperatures, even rainfall, and balanced ripening. These ideal conditions supported strong yields and complex flavour development, with harvest beginning in early March, allowing fruit to avoid February heat spikes and maintain freshness.

Single-block fruit from vines planted in 1972, handpicked at first light and bunch-selected in the vineyard for purity, concentration, and suitability for Reserve classification.

Winemaking

70% destemmed and 30% whole bunches, chilled for a four-day cold soak before wild fermentation with daily hand plunging. Pressed to seasoned 500L French oak puncheons for maturation, then gently racked and bottled without fining or filtration to preserve authenticity and structure.

Appearance: Deep, vibrant red with clarity and concentration.
Aroma: Bright red-berry intensity with nutmeg, white pepper, soft allspice, and lifted spice notes.
