Seville Estate’s Reserve wines represent the finest fruit drawn from individual estate blocks, with every bunch hand-selected for quality. Often sourced from the original 1972 plantings, these wines capture the estate’s philosophy of expressing varietal purity, site character, and the unique conditions of each standout vintage.

Region & Vintage Conditions

The 2021 season is remembered as one of the Upper Yarra’s great vintages. Mild temperatures and evenly distributed rainfall delivered balanced growth, strong yields, and deep flavour development. A March harvest allowed fruit to ripen gradually while avoiding February heat, supporting exceptional Pinot Noir quality.

Handpicked fruit from the original 1972 Pinot Noir vines, Seville Estate’s highest-elevation block, with each bunch assessed in the vineyard for Reserve classification.

Winemaking

Around 70% destemmed and 30% whole bunches, followed by a four-day cold soak and wild fermentation with no temperature control. Daily pump-overs, wild MLF, and maturation in 300L and 500L French oak (approx. 30% new) for 10 months. Naturally clarified, then bottled unfined and unfiltered to preserve delicacy and nuance.

Aroma: Intense and expressive with layers of red, purple, and dark fruit lifted by complex aromatic detail.
