Winery Background
Since its founding in 1989 by cousins Michael Hill Smith and Martin Shaw, Shaw + Smith has been at the forefront of premium winemaking in the Adelaide Hills. The M3 Chardonnay is their flagship white wine, consistently celebrated for its elegance, balance, and ability to express the cool-climate vineyards of the region.

Vineyards and Vintage Conditions
The 2024 vintage drew fruit from the estate’s high-altitude vineyards at Lenswood, Piccadilly, and Lobethal. A mild growing season with cool nights delivered exceptional fruit concentration, fine acidity, and bright aromatics—ideal for producing Chardonnay of precision and purity.

Winemaking Process
Grapes were hand-picked, whole-bunch pressed, and fermented in French oak barriques and puncheons (about one-third new). Wild fermentation and partial malolactic fermentation added depth and texture, while extended lees ageing enhanced mouthfeel without sacrificing freshness.

Tasting Notes
Pale straw with green hues. Aromas of white peach, lemon zest, grapefruit, and nectarine are layered with subtle flinty notes and hints of almond. The palate is finely structured—vibrant citrus and stone fruit at the core, balanced by creamy texture, mineral drive, and a long, elegant finish.

Food Pairing
A versatile partner for grilled lobster, roast chicken, seared scallops, creamy risottos, or washed-rind cheeses. Its balance of richness and freshness makes it equally at home with fine dining or simple seasonal dishes.
