Tar & Roses is a boutique winery inspired by Mediterranean traditions yet firmly rooted in Central Victoria. With a focus on Italian and Spanish varietals, the winery captures the balance between bold Australian fruit expression and the savoury complexity of Europe’s great wines.

Vineyards and Vintage Conditions
Sourced from Heathcote, one of Australia’s most celebrated regions for robust reds, the 2024 vintage benefited from warm days, cool nights, and long ripening. These conditions delivered Sangiovese grapes with bright fruit concentration, fine tannins, and balanced acidity.

Winemaking Process
The grapes were harvested at optimum ripeness, fermented on skins to build colour and structure, and then matured in a mix of seasoned French oak and stainless steel. This approach enhances the variety’s savoury edge while preserving freshness and purity of fruit.

Tasting Notes
Vibrant ruby red in colour. Aromas of sour cherry, red plum, and dried herbs are lifted by hints of spice and earthy notes. The palate is medium-bodied, showing juicy red fruits, firm yet fine tannins, and a savoury, lingering finish that speaks of its Italian heritage.
