Tar & Roses draws inspiration from the timeless winemaking traditions of Spain and Italy, reimagined through the lens of Central Victoria. Their Heathcote Tempranillo reflects this philosophy, offering a vibrant, modern Australian take on the classic Spanish varietal.

Vineyards and Vintage Conditions
The 2024 vintage in Heathcote delivered warm days and cool nights, creating perfect conditions for Tempranillo. The region’s famous red Cambrian soils contributed depth and richness, while the long ripening season allowed the fruit to develop bold flavours with fine tannin structure.

Winemaking Process
Grapes were hand-harvested and fermented in small open fermenters with gentle plunging to build colour and complexity. Maturation in a mix of French and American oak enhanced spice, savoury depth, and balance while retaining Tempranillo’s signature freshness.

Tasting Notes
Deep ruby red in colour. Aromas of dark cherry, plum, and blackberry are complemented by hints of cocoa, spice, and earthy undertones. The palate is medium to full-bodied, with juicy dark fruits, savoury tannins, and a lingering finish of spice and leather.

Food Pairing
Perfect alongside tapas, grilled lamb, roasted pork, or smoky barbecued meats. Its savoury edge also makes it an excellent match for paella, chorizo, or manchego cheese.
