Winery Background
The Pawn is an artisanal Adelaide Hills label created by Tom Keelan, Rebecca Wilson, and David Blows. The brand was born from a mission to rescue small parcels of outstanding fruit from being lost in mass-market blends, allowing each variety to shine in its own right.

Vineyards and Vintage Conditions
Sourced from Macclesfield in the Adelaide Hills, the 2021 vintage enjoyed a well-balanced season. Warm, even ripening conditions following good winter and spring rains allowed Tempranillo to develop generous fruit flavour while retaining its natural vibrancy.

Winemaking Process
Fermentation was carried out in two small open-top fermenters: one hand-plunged for eight days to extract colour and tannin, and another undergoing whole-berry fermentation for twelve days before pressing to oak. The wine then matured for nine months in a mix of seasoned French and new Hungarian oak, building texture and complexity.

Tasting Notes
The wine opens with aromas of dark forest berries layered with hints of mint, tobacco, strawberry, and raspberry. The palate is plush and generous, delivering flavours of cherry, blackberry, and mulberry, underpinned by subtle spice. With time in the bottle, it will evolve to show savoury notes of herbs, olives, and earthy spice.

Food Pairing
Ideal with roast lamb, slow-cooked casseroles, Moroccan dishes, or simply enjoyed with rustic cheese boards. It also pairs beautifully with dark chocolate for a decadent finish.

Cellaring Potential
Enjoy now for its youthful vibrancy, or cellar for 4–5 years to allow the wine’s complexity and savoury layers to further develop.
