Underground Winemakers was founded in 2006 in Mt Eliza by former T’Gallant colleagues Adrian Hennessy, Peter Stebbing, and Jono Stephens. With over 30 years of combined industry experience and a practical, hands-on approach, they began with a clear objective: to cultivate the right varieties and craft quality, approachable wines that remain true to style and expressive of their origins.

Produced from grapes grown on the southern Mornington Peninsula, where cool coastal influences and volcanic soils support slow, even ripening and deliver naturally balanced fruit for sparkling wine.

Sourced from mature Mornington Peninsula vineyards selected for their consistent fruit quality, varietal clarity, and ability to produce base wines with freshness, purity, and structural finesse.

Winemaking

Crafted through gentle pressing and careful handling to preserve fruit brightness, followed by a controlled sparkling production process that builds complexity, fine texture, and an elegant, balanced palate.
