What Is Fortified Wine?
Fortified wine is wine that has had grape spirit added during or after the winemaking process. That extra alcohol raises the ABV to somewhere between 15% and 20%, compared to around 12% to 14% for table wine.
The timing of when that spirit is added changes everything. Add it before fermentation finishes and you trap the grape's natural sugar, creating a sweet, rich style. Add it after and you get a dry, strong wine with real savoury complexity. That simple decision is the difference between a luscious Rutherglen Muscat and a bone-dry Flor Apera.
The tradition started centuries ago, when wine needed to survive long sea voyages from Portugal and Spain to Britain. Extra alcohol prevented spoilage. What began as a practical fix became some of the world's most revered winemaking styles and Australia has made several of them entirely its own.

Apera is Australia's name for the Sherry-style wines we have been making since the nineteenth century European naming rules mean we can no longer call them Sherry, but the wines are just as good.
