Making Ice Cream Floats With Sparkling Or Rosé Wine

Fresh, vibrant strawberries and milky vanilla ice cream are served with echoing rose wine to let you cool down in this scorching heat! We are using rose wine since it echoes or follows up the strawberry flavour, with the mixed berries on its palate, but you can experiment with with other wines and fruits, depending on what you have in your cellar and pantry. How about orange sorbet and bubbly?

INGREDIENTS

1. 1 x 750ml bottle rose wine
2. 1 x 500ml tub vanilla ice cream (If you are using a good-quality ice cream, ensure that you use a premium wine for this recipe too!)
3. 4 tbsp/60ml strawberry syrup
4. Hulled and chopped fresh strawberries, to garnish

METHOD

1. Using a squeeze bottle (Use a small ladle or tablespoon measure if you don’t have a squeeze bottle.), swirl 1 tablespoon of strawberry syrup into each glass, streaking it with red.

2. Scoop the vanilla ice cream into all the glasses. You may not want to use all the ice cream and the volume left in the tub would depend on the size of the scoop you are using. Some scoops measure 119ml of ice cream, some 139ml, and so on. 2 small scoops per glass is good.

3. Pour over the wine carefully. Sprinkle lots of fresh strawberries and serve with straws and long spoons! Beat the heat!

NOTE

It’s a good idea to first scoop out the ice cream into glasses and then pour over the wine. This prevents the wine from spilling. Also, as you pour the wine over the ice cream, some of the creamy goodness melts, infusing with the drink!
