What Does Sauvignon Blanc Taste Like?
Sauvignon Blanc is one of the most recognisable white wines in the world and it earns that status every time you open a bottle. The aromatics hit first: freshly cut grass, gooseberry, green capsicum, citrus blossom and, in warmer-grown examples, the tropical lift of passionfruit and guava. It is a wine that announces itself clearly and backs it up with a dry, crisp finish and natural acidity that keeps every sip fresh.
The tasting profile shifts meaningfully by region. Cool-climate Australian Sauvignon Blanc, particularly from the Adelaide Hills, tends toward herbaceous, mineral complexity with a restraint that makes it one of the best food wines grown in this country. New Zealand Marlborough Sauvignon Blanc is more exuberant: tropical, fruit-forward and immediately appealing. Clare Valley and Orange in New South Wales sit somewhere between the two, leaning mineral but with more weight on the palate than the Adelaide Hills style.
Regardless of origin, Sauvignon Blanc is almost always made dry, rarely oaked and best served well chilled. It is not a wine that needs years in the cellar. Pour it young, pour it cold and pair it with food.
Australian Sauvignon Blanc: Best Regions
Adelaide Hills Sauvignon Blanc
The Adelaide Hills is Australia's benchmark region for Sauvignon Blanc. Planted at 300 to 700 metres elevation in the Mount Lofty Ranges of South Australia, the vines grow through a long, cool growing season that is 4 to 6 degrees Celsius cooler than the valley floor. That temperature difference is everything. It preserves the natural acidity and aromatic intensity that distinguish a genuinely good Sauvignon Blanc from one that is merely adequate.
Shaw + Smith, founded by Martin Shaw and Michael Hill Smith in 1989, established the benchmark for the region. Their Sauvignon Blanc, herbaceous and precise with citrus blossom and green apple, has been the regional reference point for more than three decades. Pike and Joyce draw on Lenswood vineyards at high altitude for a floral, green apple-driven style with real length. Nepenthe makes a consistently excellent, food-friendly expression across multiple price points. Golding Wines in Lenswood rounds out the region's core producers with a wine that shows what cool-climate Sauvignon Blanc can achieve at a fair price.
Margaret River Sauvignon Blanc
Margaret River in Western Australia produces Sauvignon Blanc both as a varietal wine and blended with Semillon in the classic SSB (Semillon Sauvignon Blanc) style. The varietal is citrus-driven with light tropical notes and a weight on the palate that suits seafood and cream sauce dishes. The SSB blend adds texture, complexity and genuine ageing potential, making it one of the best value white wine styles produced in Australia.
Other Australian Regions to Watch
Orange in New South Wales and Tasmania are both producing Sauvignon Blanc at altitude with a cool-climate character similar to the Adelaide Hills. These are smaller, less well-known regions with limited volume, but the quality in the best years is impressive and the price is often excellent given the lack of recognition.
Australian Sauvignon Blanc vs New Zealand Marlborough: What Is the Difference?
This is the question most Australian wine drinkers have at some point and the answer matters if you are choosing between the two styles.
Marlborough Sauvignon Blanc from New Zealand is the most widely sold style in Australia. Brands like Kim Crawford, Dog Point, Cloudy Bay, Villa Maria and Squealing Pig have defined the style: tropical, bold, fruit-forward, with ripe passionfruit, guava and lemon zest and a cleansing finish that makes it immediately appealing to a wide audience. It is a brilliant style that earns its popularity.
Adelaide Hills Australian Sauvignon Blanc is a different wine. It is more restrained, more herbaceous and more mineral. The aromatics are greener: fresh-cut grass, green capsicum, citrus blossom rather than tropical fruit. It is drier, more savoury and more tightly wound. It is, for those who know it, a better food wine. It works with oysters and grilled fish in a way that the riper Marlborough style sometimes does not.
Neither is better. They are different expressions of the same variety and both have a place in your fridge.
What Food Goes with Sauvignon Blanc?
Sauvignon Blanc is one of the most food-friendly white wines in the world. Its natural acidity and dry finish cut through richness and complement delicate flavours without overpowering them.
- Seafood: oysters, prawns, grilled snapper, calamari, crab
- Salads and vegetables: green salads, asparagus, peas, zucchini, herb dishes
- Cheese: goat's cheese, fresh chevre, mild feta, ricotta
- Asian food: Thai salads, Vietnamese fresh rolls, lemongrass chicken, green curry
- Light poultry: herb-crumbed chicken, grilled quail
As an aperitif, a cold glass of Adelaide Hills Sauvignon Blanc is hard to beat. Its herbaceous character cuts through canapes, light starters and cheese boards with ease.
