What Is Riesling Wine?
Riesling is one of the world's great white grape varieties, originating in the Rhine Valley of Germany and now thriving across cool-climate wine regions in Australia. It is an aromatic variety, meaning it leads with fragrance first: fresh lime, lemon blossom, green apple and sometimes a hint of honeysuckle on the nose.
Australian Riesling is almost always made completely dry, which surprises people who associate the name with German sweetness. Here, winemakers typically ferment all the grape sugar to alcohol, leaving a wine that is crisp, refreshing and built for food.
Is Riesling Sweet or Dry?
Most Australian Riesling is dry. The sweeter styles you may have tried from Germany or Alsace are made by stopping fermentation early to retain residual sugar. In Australia, the default is dry, with off-dry and Late Harvest Riesling made only in small quantities. If you see "Late Harvest" or "Botrytis" on an Australian Riesling label, that is your signal that the wine will be sweet. Everything else in our range is dry unless noted.
What Does Riesling Taste Like?
A young Australian Riesling tastes like squeezing a fresh lime over a bowl of green apple, with a clean mineral edge and crisp, mouthwatering acidity. It is light to medium bodied, bone dry and finishes with length. The aromas are bright and lifted, not heavy or oaky. Most Riesling is unoaked, which keeps the fruit pure and the texture lean.
With age, good Riesling transforms. The fresh citrus softens into toast, honey and petrol-like complexity (a hallmark of aged Riesling that wine lovers seek out). The acidity holds everything together. A 10-year-old Clare Valley Riesling from a great producer is a genuinely different wine from the same bottle opened fresh.
Australian Riesling Wine Regions
Australia's best Riesling comes from its coolest climates, where the long growing season and sharp temperature swings between day and night preserve the grape's natural acidity and aromatic intensity.
Clare Valley Riesling
The Clare Valley in South Australia is Australia's most iconic Riesling region. It sits at altitude in the Mount Lofty Ranges, with cool nights that lock in acidity even through the warm summer days. In 2001, Clare Valley producers made history by bottling the entire vintage under screwcap, a decision that transformed how Australian Riesling ages.
Benchmark producers include Jim Barry Watervale Riesling, which is citrus-precise and tightly wound with exceptional cellaring ability. Pikes Traditionale is a Clare Valley staple with bright lime and herb character. Knappstein Clare Valley Riesling is consistently well-priced for the quality, and Tim Adams Clare Valley delivers a reliable, fruit-forward style that works well young.
The Watervale sub-region within Clare Valley produces particularly fine, pure-fruited examples. Polish Hill, further north, gives a more steely, mineral style. Both are worth exploring.
Eden Valley Riesling
Eden Valley sits to the east of the Barossa and reaches elevations of 400 to 500 metres, making it one of the coolest wine regions in South Australia. The Rieslings here are generally more perfumed and floral than those from Clare Valley, with a lifted fragrance that sets them apart.

Bay of Fires Tasmania Riesling is one of the most awarded in the country, showing classic lime and slate characters with precision and length. Josef Chromy produces a refined, fragrant Tasmanian Riesling with excellent value for the quality.
Australian vs German vs Alsace Riesling
If you have tried German Riesling and found it sweet, Australian Riesling may surprise you. The differences come down to winemaking intent and climate.
German Riesling, particularly from Mosel and Rheingau, ranges from delicately off-dry to lusciously sweet. The wines are lighter in alcohol, lower in body and often carry a petrol-and-slate character from the cool slate soils. They are beautiful wines but a different style entirely.
Alsace Riesling, made in northeastern France, is almost always dry and tends to be fuller bodied and richer than German styles. The wines have more weight on the palate, with textured, spicy complexity.
Australian Riesling sits in its own lane. It is dry and precise like Alsace but leaner, more citrus-driven and built with bright acidity rather than body. It is arguably the most food-friendly of the three. If you enjoy Sauvignon Blanc, a dry Clare Valley Riesling is likely the next wine you will love.
Clare Valley vs Eden Valley: Australia's Two Riesling Heartlands
Australia is second only to Germany in total Riesling plantings, and the two regions that define the Australian style sit side by side in South Australia.
Clare Valley is the premier Riesling region in the country. The slate and limestone soils combined with cold nights produce a wine that is all about intensity -- lime juice, lemon zest and a steely mineral finish that lingers long after you have put the glass down. These wines are drinkable when young and extraordinary after a decade. Why Australian Riesling Ages Better Than Almost Any Other White Wine
In 2000, Clare Valley producers made a collective decision to move to Stelvin screwcap closures. Their reason was simple: corks were allowing trace amounts of oxygen into the bottle, gradually degrading Riesling's delicate citrus character over time. Screwcap seals the wine completely.
The result is that Australian Riesling under screwcap evolves slowly and predictably in the bottle. The citrus-bright young wine becomes honeyed and toasted with age, developing a distinct mineral and petrol note that collectors actively seek out. A 10-year-old Clare Valley Riesling under screwcap is a remarkable thing to drink nothing like the wine it was when it was first released, and better for every year it sat undisturbed.

Does Riesling Age Well?
Yes, and it is one of the few white wines that genuinely improves with age. The key is acidity. High natural acidity acts as a preservative, keeping the wine fresh while the fruit slowly evolves into toast, honey and the distinctive petrol note that aged Riesling enthusiasts prize.
Clare Valley and Eden Valley Rieslings from top producers can age comfortably for 10 to 15 years, with the best examples showing well beyond 20 years. The screwcap closure, standard across Australian Riesling since the Clare Valley's 2001 initiative, is critical to this ageing potential. It prevents the oxidation that cork can introduce and allows the wine to develop cleanly.
