: This attractive sparkling blend has a deep ruby red colour with a luscious and fragrant bouquet giving off aromas of smokey oak, spicy cedar and bacon, along with blackberry and liqueur cherry nuances. The balanced and complex palate has a creamy mousse feel to it, providing a rich and tempting mouthfeel ending in a lingering climx. This wine tastes marvellous with duck and chicken dishes, and is a must have at the annual Burge family Christmas dinner.

WINERY INFORMATION:

Shiraz grapes for this wine were imported from vineyards in the southern corner of Barossa Valley near Lyndoch, as well as the Eden Valley region. Both these regions are known for yielding remarkable quality grapes showing intense characters and flavours. The Cabernet Sauvignon component was sourced from Grant Burge’s own Barossa Valley vineyards as well as from vineyards in the cool climate Coonawarra region popular for producing grapes with minty green leaf characters. Both the grape varieties used to manufacture this wine were crushed and fermented separately. They were left on skins and pumped about three times daily. Primary fermentation took place in American as well as French oak barriques, followed by aging for fifteen to eighteen months carried out in old puncheons.
