The luscious grapes used to create Bimbadgen MCA Celebrations Shiraz was cold soaked, pumped and then left on skins, post fermentation. The juice was stored in new and old French oak for malolactic fermentation. This process led to the creation of a dark cherry red hued wine. The perfumed nose exhibits vibrant aromas of blackberries and red fruits, with subtle oak notes following close behind. Supple tannins and natural acidity integrate with the dense palate containing blackberry and red currant flavours, to culminate in a juicy and lengthy finale. With the potential to be cellared for 5 or more years from vintage, this enticing Shiraz goes well with roasted kangaroo, grilled porcini mushroom and smoked cheese.

WINERY INFORMATION

Bimbadgen means ‘place of good view’ in the local indigenous language. The Bimbadgen vineyards primarily focus on nurturing three grape varieties – Shiraz, Semillon and Chardonnay grapes. Winemaker Richard Done uses these selected fruit parcels to craft a unique range of balanced and full flavoured wines. The estate’s cellar door is situated on McDonalds Road in Pokolbin, NSW.
