The lead up to vintage 2010 saw quite mild growing conditions and some rainfall. Early harvest provided ideal growing conditions with January and February night temperatures being slightly below average allowing fruit to ripen retaining the varietal characteristics and retain some natural acidity.
Specific parcels of fruit selected by the winemaker for their enhanced sweet berry and cherry fruit characteristics. Cold Soaked on skins for 48 hours to enhance the sweet fruit flavours and aroma’s. Fermented on skins until desired sugar level was reached, then the ferment was arrested to retain natural sweetness and sweet berry fruit flavours.
