: The resulting wine leaps out of the glass with beautiful aromatic red fruits, followed by more complex floral and spice notes. The palate is long and inviting, with integrated fruit and oak tannins supporting vibrant fruit flavours and earthy spice tones. The acidity in this wine balances the palate and suggests this wine will age well for up to 8 years. Venison isn’t a meat we often have the opportunity to enjoy, but it is so delicious when cooked correctly that we couldn’t help including it here as a match with our pinot. Try searing venison fillet in a hot pan, deglaze the pan with a splash of pinot and a tablespoon of quince jelly, pop it in the oven until just pink inside. Sautee shallots in the pan until golden and serve venison sliced on top of a bed of creamy mash, with golden shallots, and steamed green beans.

WINERY INFORMATION:

In Dreams is a project that has been evolving for the past 8 years. It is a long story that began as a conversation over the phone in Portugal, moved to a chat over a coffee in Armadale, skipped over the ditch to Central Otago and finally came to fruition in the Yarra Valley in 2013.
