This dark crimson coloured Polish Hill River Cabernet Merlot is a beautiful blend of 30% Merlot grapes and 70% Cabernet Sauvignon grapes. The luxurious bouquet exhibits lively scents of blackcurrants, dark cherries, gentle spice and cigar box, with a touch of choc-mint evident in the backdrop. The rich palate is rife with intense flavours of dark cherries and blackcurrants, coupled with subtle oak notes. These characters are supported by soft tannins, eventually ending the wine in a balanced and textured finale. This dazzling Cab Merlot can be enjoyed within a cellaring term of six to eight years. It is a great food accompaniment to Coq Au Vin, mature cheeses and Mediterranean dishes.

Founder Neil Paulett established Paulett Wines with the objective to fulfil his lifelong dream of creating a brand that shall be remembered for generations to come. The company is presently owned by Neil and his wife Allison, and their son Matt Paulett manages the family vineyards. As Vineyard Manager, Matt ensures that the finest quality vines are nurtured and harvested from these vineyards.
