For this wonderful red blend, the Shiraz and Cabernet Sauvignon grapes from Penny’s Hill Vineyard were combined with the venerated Merlot variety from Goss Corner Vineyard. Fruit from each parcel was vinified separately in the winery. This Shiraz Cabernet Merlot has a deep crimson colour with light red hues. The nose wafts aromas of dark plums and blueberry fruits with oak spice, dark chocolate and cedar oak nuances infused within. A well balanced and intense mix, the palate displays a profusion of dark bramble fruit with a fine strata comprised of mocha, spice and basic earthy tones. The fine and long tannins from the Cabernet Sauvignon strain match perfectly with the classic French oak characters to produce a wine of prestige and persistence. There are a host of simple foods out there which can be consumed with this complex wine blend, such as a simple steak and sidings.

Tony and Susie Parkinson ably run the well-known Penny’s Hill winery, which currently owns three vineyards, namely Penny’s Hill Vineyard, Goss Corner Vineyard and Malpas Road Vineyard. An added advantage is their ample source of fruit from nearby cool-climate vineyards in Adelaide Hills.
