The Geoff Weaver wine estate is a family - owned and operated business that was established in the year 1982. Back during the early - 1980s, the Adelaide Hills region was relatively untried for the growing of grapes and production of wine. The basic aim of the team was to plant diverse varieties of grapes that would expand the flavour profile of the vineyard and produce newer wine varietals. The winemaking team at Geoff Weaver adopted a different approach for growing the grapes. Low - yield varieties were chosen which could ripen fully in the cool, hilly environment of the region. Today, the place is flourishing with vines. Proper care is taken to shield them from strong winds and extremely hot or cold temperatures are avoided. The vineyard site consists of ancient soils with low fertility and is situated high on the slopes which allows for cold air drainage and water - holding capacity.
